Rubio’s® Introduces Sustainable Wild Alaska Coho Salmon in Entrees Across its Menu

San Diego County CARubio’s® Restaurants, the brand known for its uniquely delicious coastal cuisine and popularizing the fish taco, today announced the introduction of sustainable Wild Alaska Coho Salmon to its menu as part of its ongoing “Made With a Mission” commitment. The rich, full-flavored salmon is available grilled or house blackened and will replace Atlantic salmon in entrees across the menu. To celebrate the introduction of Wild Alaska Coho Salmon, Rubio’s is bringing back its popular Chimichurri Salmon Two Taco Plate and Burrito, which will be available for a limited time beginning June 1. chimichurri-salmon-family

Created by Co-Founder Ralph Rubio and the Rubio’s culinary team, Chimichurri Salmon just in time for summer. Bursting with flavor, each item features the new sustainable, grilled Wild Alaska Coho Salmon topped with Rubio’s chimichurri sauce – a savory blend of basil, parsley, chives, garlic and olive oil. The Chimichurri Salmon Two Taco Plate features grilled salmon placed atop warm stone-ground corn tortillas topped with chimichurri sauce, fire-roasted corn, creamy white sauce, Fresno Chiles and spring mix, and is served with no-fried™ pinto beans and sea salted tortilla chips. The Chimichurri Salmon Burrito wraps Wild Alaska Coho Salmon melted cheese, chimichurri sauce, fire-roasted corn, Mexican rice, black beans, salsa fresca, Fresno chiles and creamy white sauce in a warm flour tortilla.

“It’s always been important to us that our guests feel good about what they are eating, and that starts with the ingredients we use,” said Rubio. “The introduction of sustainable Wild Alaska Coho Salmon demonstrates our commitment to food quality and our promise to continue evolving our ingredients. We know our guests love the Chimichurri Salmon Two Taco Plate and Burrito from when we offered it a few years ago, and we hope they enjoy the new take on these bold, savory dishes all summer long.”

Rubio’s has been committed to serving delicious coastal food made with quality ingredients for years, as demonstrated through the sustainable seafood found across its menu, daily handmade salsas and guacamole, and fresh produce delivered weekly. As part of the company’s “Made With a Mission” commitment – to serve coastal food that not only tastes great, but that its guests can feel great about eating – Rubio’s also recently introduced all natural chicken raised without antibiotics and all natural bacon with no nitrates or nitrites added, except those naturally occurring in natural ingredients, to entrees across its menu.
